Salmon Cakes

Another season is quickly coming to a close, and now it’s time to tease the taste buds with some warm winter foods.  Summer is gone, fall is not far behind, and soon it will be winter time. Winter recipes are back in town, so let’s settle down and enjoy some warm winter recipes. Cozy warm blankets, the nice sweet smell of coco drifting in the air.  Try this simple savory recipe for a quick lunch or dinner this upcoming fall/winter. You will be amazed by the taste.  Winter is the season for warm comfy foods that help to calm the soul. Last year I had the pleasure of sampling some of the tastiest warm winter recipes, which has led me to want to share some of my recipes with you.  So fire up the stove, get your taste buds ready, and get ready for a winter flavor explosion! Don’t forget, we can use all those herbs grown this past summer.


Salmon Cakes Recipe

It’s fine to use canned salmon instead of fresh salmon potato instead of flour in a recipe like this…it’s a great budget saver and you won’t be able to tell the difference.


-1 can of salmon

-2 slice of crispy bacon strips crumbled

-1 egg

-1/2 cup mayonnaise

-1/4 cup chopped onion

-1/2 teaspoon sugar

-1/2 lemon, zested

1/4 lime, zest

-1/4 cup breadcrumbs

-1 1/2 teaspoon Dijon mustard

-a pinch ground black pepper

– salt to taste

-1/2 cup vegetable oil

-1 baked potato, peeled and kind of fluffy will do.


Broil two slices of bacon in a pan. Heat 1 tablespoon of the bacon fat in a small frying pan over low heat. Add the onions and cook until sautéed. Let cool a few minutes before adding to other ingredients. Then, mix bacon, onion, egg, mayonnaise, mustard, sugar, and lemon and lime zest in a large bowl, add pepper and salt. Mix the salmon and potato into the bowl of mixture. Form the salmon mixture into small patties. This should make about 10 small patties. Heat 1/4 cup of oil in a large pan over medium heat, and cook until golden brown, about 4 to 5 minutes on each side. Add more oil to the frying pan, as needed. Arrange on a serving platter and serve hot with your favorite dish, add hot sauce for taste, if desired.
